CAJUN DIRTY RICE

4 CHICKEN LIVERS
4 CHICKEN GIZZARDS
1/2 CUP CHICKEN FAT OR OIL
1/2 POUND GROUND MEAT
1 ONION
1 BELL PEPPER BOTH CHOPPED
3 CELERY STICKS CHOPPED
2 CLOVES GARLIC MINCED
1/4 TEASPOON RED PEPPER
1 TEASPOON SALT
1 BAY LEAVE
1/2 TEASPOON THYME
2 CUPS WATER OR BEEF STOCK
2 CUPS RICE
4 GREEN ONION CHOPPED
1/4 CUP PARSLEY CHOPPED

BOIL LIVERS AND GIZZARDS TILL DONE SAUTE GROUND MEAT IN OIL MAKE SURE TO BREAK IT UP COOK TILL BROWN ADD ONION BELL PEPPER  AND CELERY TO THE MEAT COOK TILL VEGGIES ARE TRANSPARENT NOT BROWN  PUT LIVERS AND GIZZARDS IN FOOD PROCESSER R BLENDER ADD MEAT MIXTURE  WITH WATER SIMMER 30 MINUTES  AT THIS POINT YOU MAY REMOVE BAY LEAVE COOK RICE AS NORMAL MIX ALL WHEN RICE DONE ADD GREEN ONION AND PARSLEY  REMOVE FROM HEAT 10 MINUTES BEFORE SERVING  THIS DISH ALSO FREEZES WELL
